At Vinoteca Mendibil we offer a very special type of cured Iberian products produced by the prestigious Juan Pedro Domecq label. As part of their mission to produce the most exquisite cured meats possible, this firm, which is based in Jabugo, concluded that the almost extinct 100% Iberian mamellada-lampiña breed of pig was the best option, due to the exquisite marbling found in the meat when the animals are fed on acorns.

Domecq limits annual breeding to just 3,000 pigs, all of which live in total freedom in the company’s pastures from time they are suckling piglets right up until they are slaughtered at the age of 22 months. This means they enjoy two 4-month montanera (or natural fattening) periods, double the time required by law for them to be classed as ‘acorn-fed’. As a result, the ham, presa, chorizo and loin made from these animals all have a more intense aroma and flavour. An exclusive delicacy served by Michelin-starred chefs all over the world.
