We offer only the best smoked fish, made by Carpier from fresh salmon weighing over 10 kilos, breed in the coldest and purest waters of Norway, the Faeroe Islands and Scotland.
The best specimens are carefully selected and the bones removed one by one as the fish are cut into pieces following the traditional method. The exceptional quality of the raw material is further enhanced and a caramel touch added through a blend of the very best salt and sugar.
Finally, pine cones from Mediterranean pines are burnt to provide a light, delicate smoking process that gives Carpier products their delicious firmness and juiciness.
